The point is that there is nothing to be scattered about with such categorical statements. They are holy, firstly, and secondly, they are not true for everyone.
Pokhlebkin, maybe not bad. To be honest, I do not cherish reverence for him. Disappointed. I am annoyed by his snobbish attitude to others, and to domestic gastronomic and culinary habits.
However, currying favor with the West, admiration for Western cuisine is at the subconscious level of many.
Here I will add: I will not support those authors who beat themselves in the chest with a bast shoe and shout that it is necessary "to eat only your own, native" and in full swing foreign.
I will not exactly follow any, not even a recognized authority in the field of culinary, ignoring others. Because cooking is a vast, interesting layer that combines culture and knowledge. And it is formed not only by the masters, whose names are on everyone's lips, but also by every person who prepares his own food at least once a week. Anyone in their kitchen can make amazing culinary discoveries, and skip them or ignore them - well, it's like robbing yourself.
On the topic of cooking, I read and look at many, many sources. Among these sources there are domestic and foreign ones. There are blogs of food lovers, there are magazines of chefs. There are books that the whole world reads, there are notebooks, grandmothers and mothers that ordinary users scan and upload. I listen to the stories of elderly people who have stood at the stove all their lives and young people who are now discovering new facets of the skill of playing with taste - the same molecular cuisine, for example.
And I sincerely advise everyone to do the same, not limiting their horizons to one "authority". Because such blinkering deprives us of the most important thing - hundreds of other options for delicious food.
