A very tasty and quick recipe for making eggplant. I really love eggplants and cook a lot of them, but I've discovered a recipe for mini eggplant pizza! You can change the ingredients and always get a new taste. Kids and adults are happy with this dish, try it!

A step-by-step recipe for making eggplant with a photo:
First of all, I wash the eggplants well and cut them into rings one centimeter at a time.
To prevent the eggplant from becoming bitter, I put the rings in a bowl in layers, sprinkle each layer with salt and leave it for 10 minutes.
Then I drain the released liquid, rinse the eggplants under running water and wipe them dry with a towel.
I cut tomatoes into rings.
I cut olives into rings (I remind you that you can take a variety of ingredients). This is an analogue of pizza, add what you want :)
I rub the cheese.
I cover the baking sheet with baking paper and grease a little with oil and spread the eggplants. I send them to an oven preheated to 200 degrees for 15-20 minutes.
The eggplants are ready - this is the basis for the pizza. I grease each circle with tomato sauce (you can use ketchup or your favorite sauce).
Stacking tomatoes
Then spinach (a lot of it grew in my garden). Can be replaced with basil, cilantro, dill, parsley.
Cheese and olive on top.
Preheat the oven to maximum and cook for 3-5 minutes.
These are the mini-pizzas. Bon Appetit! The same can be done with zucchini.
