This is our favorite eggplant recipe, my husband is delighted with them. Such eggplants are prepared very quickly! I recommend you try it. I am sure that you will take this recipe into your piggy bank of quick recipes.

I wash the eggplants well, cut off the stalk and cut into not very thin plates, then cut into strips. This is how it turns out:
I put the eggplants in a deep bowl, add a raw egg and mix. I leave the eggplant for 15 minutes, if there is time, then it can be longer.
According to my observation eggplants in egg marinade absorb less oil and are tastier.

Finely chop the onion and fry it in a pan with vegetable oil.
I add the eggplants, stir and fry the eggplants until they are slightly golden, usually 7 minutes is enough for me.
I add one tablespoon of mushroom powder. I just take dried mushrooms, grind in a coffee grinder and this is such a funky seasoning.
You can replace mushroom powder with mushroom seasoning from the store, well, if you like bouillon cubes, then you can take a mushroom cube. I don't buy them, my favorite is with dried mushrooms. It's more comfortable for me.
Salt to taste, if desired, you can pepper.
I add sour cream, mix, cover the lid and carcass the eggplant for about 10 minutes.
