Delicious salad for the winter without sterilization, no vinegar, no sugar! The recipe is simple, our whole family loves this salad. I can open the jar and just eat it all - that's dinner! I highly recommend that you try to close at least a few sample jars.

All vegetables must be washed well.
I cut the bell peppers into small pieces. Like these ones:
Immediately I will transfer all the vegetables to a large enamel pan.
I cut the onion into small cubes and transfer to a saucepan.
I rub the carrots on a coarse grater and put them in a saucepan.
I cut the tomatoes into small cubes and also add them to the vegetables.
I cut the eggplants into cubes and into a saucepan.
I did not fit all the eggplants, I put some in a deep bowl.
The note: I "do not soak" the eggplants, they do not taste bitter. I have eggplants from my garden. But if you are worried that they will taste bitter, then you can salt the already cut eggplants and pour water. Leave for 20 minutes and then squeeze and use as prescribed.
I cut the apples into cubes and also for vegetables.
I add salt to the vegetables in a saucepan and stir.
Advice! Salt must be used stone table salt.
Then add the sunflower oil and place the pot on the stove over medium heat. Immediately add finely chopped parsley (dill can be used) and mix.
Vegetables begin to diminish - "quenched", and gradually add the remaining eggplants.
I stew vegetables for about 50 minutes, I like it when everything is soft. You can also reduce the cooking time. From time to time I go to the pan and stir the vegetables.
5 minutes before readiness, add chopped garlic (you can use a press or on a fine grater) and black pepper. Mix everything, cook for 5 minutes.
I put the salad in sterilized jars and screw it with sterilized lids.
The jars must be turned over, covered with a towel and left to cool completely.
Then I transfer the salad to the cellar and store it there. Friends say that they keep the salad in the apartment, but I have a cellar and I keep all the preparations there.
Try to cook at least a jar of such a salad with eggplant and pepper for the winter, you will like it! Bon Appetit!

- 1 kg. sweet pepper.
- 700 gr. tomatoes.
- 700 gr. carrots.
- 700 gr. onions.
- 400 gr. apples.
- 10 cloves of garlic.
