I love processed cheese, but I know that the store is made from all sorts of nonsense. I decided to somehow try to make cheese myself. I tried many recipes, but this homemade cheese recipe turned out to be the most delicious and surprisingly simplest. I have never met a simpler recipe.
The processed cheese turns out to be homogeneous, without lumps, with a delicate texture and a pleasant creamy taste. I add various additives to it and get a new taste. This time I decided to add dill, or maybe ham, mushrooms. This cheese is much tastier than the store and healthier. All ingredients are the simplest. The process of making cheese at home takes 10 minutes.

Step-by-step recipe for making homemade cheese:
I transfer the cottage cheese into a deep bowl and interrupt with a blender until smooth - this process takes about 30 seconds.
Important!I always use homemade cottage cheese. I tried it from the store - it also turns out great, but the cottage cheese must be taken at least 9% fat and always of good quality, without vegetable fats - otherwise the melting process will go very slowly.
I transfer the cottage cheese to a stainless steel saucepan.
Important! Enamel cookware will not work.
I add a chicken egg to the curd, half a teaspoon of salt and half a teaspoon of soda. I mix well.
After adding soda, the curd becomes straight airy.
I put the saucepan on a small fire and constantly stirring, I wait for the cottage cheese to start melting. After a couple of minutes, you will already feel that the melting process has begun. It becomes easier to mix.
When the cottage cheese has become liquid and the mass has already begun to stretch, I add butter.
Important! The butter should be at room temperature, and the butter should be of good quality - no vegetable fats. Spread, margarine will not work.
I constantly stir the future cheese and bring it to a boil - this is important.
You should get a liquid homogeneous mass. In total, the cheese took 10 minutes to cook.
Now you can add any filler to the cheese: I have dill. I mix well.
I leave the saucepan with cheese on the table, let it cool down a little. Stir the cheese from time to time, otherwise a crust begins to form.
As the cheese has cooled down, I pour it into the molds. I have 2 plastic containers of 250 gr. The total is half a kilo of processed cheese.
I send it to the refrigerator until it thickens.

Believe me, this cheese cannot be compared with the store one. Having tried it once, you will cook constantly.
