Every year I harvest eggplants this way and are always happy. I have been using this method for many years and I believe that this is one of the most successful ways to freeze eggplants and then get really tasty vegetables, and not "rubber". Many people make mistakes when freezing raw eggplants. This won't work with eggplants. If you freeze raw, then you will then get "rubber" vegetables. Try my method and you will change your mind about frozen eggplants.

It is better to take young eggplants, not very large. From my garden.

I wash the eggplant well and wipe it dry with a towel.

I prick the eggplants with a knife (you can use a fork). This is necessary so that the eggplants do not "shoot" during baking.

Cover the baking sheet with baking paper and lay out the eggplants. I will bake it whole.

I send the eggplants to an oven preheated to 200 degrees for about 40 minutes.

Advice on how to know that the eggplant is ready:

you need to take a toothpick and pierce the vegetable, if the toothpick goes in and out with ease, then the eggplants are ready.

Time has passed, I take out the eggplants and put them in a saucepan. I cover the lid and take it out when they cool to room temperature.

Why did I do this? It's very simple, then I'll peel off the skin with ease.

As the eggplants have cooled down, I peel them off. I cut off the stalk and clean it. It is very easy to clean.

I put the eggplants in a sludge container. I am comfortable with two. And I send it to the freezer.

In winter, I make an amazing salad with these eggplants. It is very simple: eggplant, onion in half rings, garlic, tomatoes, salt, olive oil. Try it - it's really tasty, especially in winter. The eggplants must first be defrosted.

It is also very tasty to make caviar from such eggplants. And how pleasant it is to eat it in winter!
