This cold soup is what you need in the summer heat. Very refreshing. In the summer I cook it almost every other day. The time takes 5 minutes. When I don’t want to stand near the stove, then this is my salvation. Try it too. Everyone who has tried it says that this is Gazpacho :) But I have not been to Spain... I cannot say that this is Gazpacho, but what do you think?

A step-by-step recipe for making cold soup with a photo
1. First you need to peel the tomatoes. By the way, tomatoes can be used both fresh and frozen. I still have last year's tomatoes from the last harvest, and I will use them.
Well, I cut the tomatoes into fairly large pieces.
If you have fresh tomatoes, make a cross-cut and scald the tomatoes with boiling water, the peel will come off easily.
In my case with frozen tomatoes - I just take the tomatoes out of the freezer and under the hot water tank - the peel is very easy to remove.
2. I cut the onion into 4 parts, the garlic into 2.
3. I peel the bell peppers and cut them into fairly large pieces.
4. I cut the cucumbers into pieces. I have my own cucumbers, young, so I won't peel the peel.
5. I pour olive oil into a blender bowl, add all vegetables (except tomatoes), salt, pepper and grind everything in puree.
6. Now I'll add the tomatoes and again "turn" everything into puree.
By the way, this soup can be prepared with an immersion blender.
I'll have a restaurant serve :)
I put the soup in a glass, cover the plate on top and turn it over. Garnish the plate with fresh basil and cherry tomatoes. The "Wow!" guaranteed. Bon Appetit!
