Who among us does not like cookies, and even with tea or coffee? I don't think there will be such people, right?! And if with homemade cookies, mmm….
My husband loves this particular cookie and asks me to cook it almost every day... He does not recognize cookies from the store, they are too cloying and with a huge composition ...
These homemade cookies come out very economical. Butter is just a drop, a little kefir (you can even one that costs a long time). Cookies can be sprinkled with seeds, various nuts, poppy seeds, sesame seeds, just sugar, cinnamon, cocoa and much more if desired. That's what I have at home, that I use. And you can not sprinkle with anything at all. A huge plus of this cookie is that it can be cooked without sugar (anyone can’t), adding a little raisins, prunes, dates or dried apricots, it turns out sweet. By the way, that's what I do.

Pour kefir into a deep bowl (any fat content is suitable), add ¼ teaspoon of baking soda and mix. Kefir will extinguish the soda and get an air cap.
I add the egg. I have a small egg, weighing 40 grams. If you have a large egg, break it into a separate plate, mix with a fork and add the required amount to the kefir.
I add a pinch of salt and melted butter. Oils only 25 gr. - It's enough. I will mix everything with a whisk.
Sift the flour, first add half the flour and knead the dough, gradually adding the remaining flour.
As it became difficult to stir the dough with a spoon, I begin to knead with my hands. It took me 200 grams of flour. The dough should not stick to your hands.
I add raisins. It is better to pour boiling water over it in advance for 10 minutes, and then dry it with a paper towel. Instead of raisins, you can take prunes or dried apricots (finely chopped). Or you can not use dried fruits at all, but take one or two tablespoons of sugar.
I mix the raisins into the dough.
I make a tourniquet from dough and cut into 10 equal parts. I do it with a pizza knife. Very comfortably.
I take a piece of dough, make a flagellum out of it and press it down with my hands. It is not necessary to do it subtly. These are the cookies. You can make any form.
With one side I "dip" cookies in nuts, seeds, sesame seeds, poppy seeds, coconut flakes, sugar or sprinkle with cinnamon, cocoa. What you love.
I put the cookies on a baking sheet. I don't grease the baking sheet with anything, we have butter in the cookies - that's enough.
I cook cookies in an oven preheated to 180 degrees for about 20 minutes.
