Today I will share with you an amazing recipe for what I think is the correct fried pie dough. I'll tell you all my secrets! With him I always have successful, magnificent pastries. There is an expression - dough like fluff. This is exactly such a dough. Airy pies, like a "cloud" come out. Not a single person who has tasted even a small piece will be left indifferent.
For cooking we need:
250 ml. kefir.
50 gr. sour cream.
400 gr. flour
Egg - 1 yolk.
1 tsp salt.
1 tsp Sahara.
0.5 tsp soda.
1 tbsp sunflower oil.
A cold snap has already come and I wanted hot tea with aromatic, homemade pastries - namely, fluffy pies in a frying pan!
Let's start cooking!
Add sour cream, salt, sugar, yolk, vegetable oil to kefir and mix.
* Kefir should be taken from 3% fat, and sour cream from 20%. This greatly affects the result.
I add some of the sown flour and right now I add soda! *This is one of the secrets why pies are very fluffy and airy. You don't need to extinguish the soda with any vinegar or lemon juice.
I knead the dough with a spatula.
As it becomes difficult to stir the dough with a spatula, I begin to knead the dough with my hands right in the bowl, gradually adding flour.
The dough will begin to stick to your hands. You need to grease your hands with vegetable oil and continue kneading.
Flour will take 400 grams and another plus or minus 20 grams.
The dough is very soft and does not stick to your hands. It is not necessary to knead it for a long time. I'll cover the dough with a plate and start filling.
You can choose any filling. I made cabbage filling. I really love pies with cabbage!
I grease my hands with vegetable oil and transfer the dough to the work surface. It will be more convenient this way. Divide the dough into 10 equal parts. In total, you will get 10 great pies.
While I'm working with one piece of dough, I'll cover the rest with a towel so that it doesn't get windy.
I form a ball from a piece of dough and roll it into a circle with a rolling pin. (the rolling pin also needs to be greased with vegetable oil).
I add a tablespoon of the filling to the dough and pinch the edges, forming a pie.
I shift the pie with the seam down and run a little over it with a rolling pin and such a pie should turn out.
* You need to cook such pies in a well-heated skillet with a decent amount of oil!
Then they are completely baked and the dough inside will not be soggy.
