Of course, it is difficult to compare potato sausage to homemade meat sausage. But store sausages are definitely inferior to her. This is a great snack for any festive table or just for dinner. Hearty, aromatic and delicious!
First, I will prepare a casing for the sausage. I usually have a few meters of this beef carcass. I rinse it well, then fill it with water and vinegar and leave it for 2-3 hours.

I fry the onion in a small amount of vegetable oil. I add mushrooms cut into small cubes to the onion. Salt and add pepper. When the liquid evaporates from the mushrooms, I send the brisket, also finely chopped, into the pan. I fry for another 7 minutes.
I rub the potatoes on a coarse grater and the second onion on a fine grater. Squeeze the grated potatoes and drain off the excess liquid.
I combine potatoes with fried mushrooms and brisket. Salt to taste and add black pepper. I stir it. I fill the prepared shell with this potato "minced meat". But not too tight, otherwise the sausages may burst! I tie the edges with thread and twist the sausages.
I put it in an oven preheated to 180 degrees for 40-50 minutes. I always prick the sausages with a needle so that they don't burst.
Serve hot. This is delicious!
