How I prepare meat for the holiday table

Baked meat with pickled cucumbers. Delicious! And nothing complicated! You can take any meat. Preferably fatter. Pork neck or fatty beef will do. Cut into portions. I don’t salt!

I fry the pieces of meat over high heat on both sides until golden brown. You don't need to cook for a long time. About a minute on each side should be sufficient.

I cut the carrots into large pieces and put them on the bottom of the mold. Top - pieces of fried meat. I don’t salt the meat! I add black pepper. I got two layers of meat today. Any form will do. I have a glass pan. But you can cook in any form. Foil can be used instead of a lid.

Now pickled cucumbers. Not salted, but pickled. Cut into rings and spread on top of the meat in a thick layer. It is necessary that the cucumbers cover the meat completely.

For cucumbers - a few sprigs of rosemary, cilantro and basil. Cover and put in a cold oven.

I set the temperature to 200 degrees and the time to 1 hour. Then I cook for another 30 minutes at 150 degrees. I don't open the oven right away. I leave the dish in the turned off oven for another 15 minutes.

I take the pan out of the oven. I open and remove the cucumbers. They are no longer needed.

Serve the meat with baked vegetables. it turns out to be so soft and tender that it doesn't even cut with a knife. And it breaks down easily into fibers.
