If I need to like the dessert for sure, I cook something from cottage cheese dough with apples. A win-win option. It always turns out delicious! Today I have a tear-off cake that all my family are delighted with. A big plus of this recipe is that it cannot fail.
How to cook
Beat eggs with sugar, a pinch of salt and vanilla. I use a regular whisk.
I add melted butter and cottage cheese. I preliminarily chopped the cottage cheese in a blender (you can grind it through a sieve). If I use soft curd, I add it to the dough right away.
Mix again with a whisk and add flour, baking powder and some baking soda. I always add both soda and baking powder to the curd dough - this way it turns out to be more airy.
I knead a soft dough and put it in the refrigerator for about half an hour.
At this time, I am preparing the filling. I rub the apples. I heat a little butter in a frying pan, put the grated apples, add sugar and fry, stirring constantly, for 7-8 minutes.
Let the filling cool down a little.
I take the dough out of the refrigerator, cut it into small pieces, roll it out with a rolling pin, put the filling in the middle.
Form small cakes and lay them out nicely in an oiled pan.
Beat the egg yolk with a spoonful of milk and grease the top of the pie.
I put it in an oven preheated to 180 degrees for 15-20 minutes. Take a look in your oven. When the pies are browned - it's done!
We eat such a pie, carefully tearing off the pies. Therefore, we call it "tear-off".
But you can also cut it like a regular pie. This is how the pie looks like a cutaway:
