Recently, lemon salt has been one of my favorite seasonings for fish dishes and chicken. It needs much less than ordinary salt. And the taste of the dishes, of course, is completely different.

I have not been buying spices for fish for a long time, lemon salt and a few sprigs of rosemary and thyme are enough for me. And fish cakes with such salt are much tastier, and baked chicken. Would recommend if you haven't tried it. It's very easy to prepare!
COOKING:
One medium lemon wash well and wipe dry. I remove the zest from the lemon with a grater.
Juicing a whole lemon.
I put 120 g of sea salt into a ceramic or glass baking dish. I add the zest.
I'm also sending lemon juice here. I stir. Here's what happens:
I put the dish in the oven and cook at 190 degrees for about 20 minutes. You need to look in your oven! If the salt dries quickly and darkens, take it out. 12-15 minutes may be enough!
Be sure to mix the salt two or three times!
Then I take the salt out of the oven and put it on a baking sheet lined with parchment paper. And I distribute it well.
I put in a still hot oven (off) until the oven cools completely. The salt should dry out during this time. If it remains slightly damp, I turn on the oven for another 10 minutes, but I set the temperature to no more than 50 degrees and turn on the "Convection" mode.
I pour the prepared salt into a dry glass jar and store it in the cabinet.
I cook fish completely without spices. Sprinkle the finished fish with lemon salt. This is delicious!
