Today I have borsch for a side dish π. We call it "dry borscht". It tastes like borsch, only without broth.

Chop the onion finely and fry in vegetable oil for 3-4 minutes.
Then I add the carrots. I cut all the vegetables into strips of about the same size. After 2-3 minutes, send the beets to the pan and fry for about 5 minutes more.
I add bay leaves, salt a little and pour in a glass of tomato juice (I have home). The juice can be replaced with 1-2 tablespoons. tomato paste and an incomplete glass of water. Cover and carcass for 5-7 minutes.
Then I add cabbage and bell peppers, chopped into thin strips, mix, cover again and simmer for about 20 minutes over low heat.
At the very end, I add the pre-boiled beans. Today I have it canned in tomato sauce, so I'm sending it to the pan along with the sauce.
I stir, add finely chopped greens and let it brew under the lid for 5-7 minutes. And you can serve!
Both hot and cold are equally delicious! Can be served as a side dish or as a separate dish. Those who love borscht will definitely appreciate it!
