Even my mother did not know these methods. And I never boiled eggs on which there was even the slightest crack.
The first way
If the crack is small, use it. This method is the easiest. And the most popular one.
I add a spoonful of salt to the water, bring to a boil and carefully lower the eggs into boiling water. From salt water, the protein quickly curls up and does not flow out.
Second way
I put the eggs in a double boiler, crack down. The protein from the steam is "sealed". Then you can dip the eggs in a pot of water and cook in the usual way. But in a double boiler, after 10-12 minutes, the eggs will also cook well.
If you don't have a steamer, you can use a regular mesh, sieve, or even cheesecloth. In the same way, lay out the cracked egg with the crack down and hold it slightly over the steam. Then cook.
Third way
This way, you can boil an egg even with a large crack. Everything is very simple.
I wrap the egg in plastic wrap. You can use a plastic bag or a baking bag.
I dip the wrapped eggs in cold water.
I bring the water to a boil and boil the eggs as usual. Then I dip the eggs in cold water, remove the film and clean.
