Buckwheat should be boiled until tender and cooled well. You can use yesterday's buckwheat.
Then it needs to be crushed using a meat grinder or blender. Together with buckwheat, I chop the onion (the ratio of buckwheat and onion is 1: 0.8). I used the finest mesh grinder.
I add salt and spices. You can add a clove of garlic. It is better to use spices that are usually added to meat patties. I have a vegetable and herb seasoning that I make myself.
I mix everything well. If the minced meat is dry, I add a little water. For the "bundle" - a spoonful of flour or starch. If not in the post, you can add an egg. I showed both options in the video))
It remains to mold and fry the cutlets. Everything is exactly the same as regular meat ones. To keep the cutlets better, you can use breading. Fry on both sides until golden brown.
I steam a little under the lid. And you can serve. Those who do not know what the cutlets are made of will never guess that there is absolutely no meat in the composition. Checked already! Well, the taste and appearance are very similar)) Especially if you add an egg to the minced meat!
