I cook such pancakes with pumpkin, carrots, potatoes, and cabbage. It's summer now, so I will cook zucchini pancakes (I will add some carrots). These pancakes have nothing to do with those pancakes that use fresh, grated vegetables. This is a completely different recipe! And the taste is very different!

Boil vegetables until tender. I send the carrots to the pan first. After 15 minutes I add the zucchini to the same place.
When it has cooled down a little, I transfer the vegetables to a blender and chop them to make a puree. You can leave some water in which vegetables were cooked to make the puree more liquid. You can grind it in any other way.
Put the finished puree in a suitable container.
I add an egg, salt, sugar, butter and soda, quenched with lemon juice (or vinegar).
I mix everything with a whisk and gradually add the sifted flour. Flour always leaves a different amount. You need to make the dough thick!
If I make liquid puree, sometimes it takes 2 times more flour than indicated in this recipe. It is difficult to name the exact amount of flour here. This is how the dough should turn out:
Let the dough stand for about 10 minutes and fry the pancakes on both sides over low heat. Then I put it on a paper towel.
The pancakes are lush, soft, very aromatic and very appetizing. Serve both hot and cold. And for dessert and as a snack. They are not at all like classic zucchini pancakesnor on pancakes on kefir. The taste is completely different. And every time a new one! Depends on which vegetables to take as a basis.
RECIPE:
• Vegetables (squash and carrots) - 500 g
• Egg - 1 pc.
• Flour - 300 g (approximately!) - may take more, add gradually until the consistency I have!
• Sugar - 1 tbsp.
• Soda - 1/2 tsp.
• Lemon juice (or vinegar) - 1 tbsp.
• Salt - 1/2 tsp.
• Vegetable oil - 1 tbsp.
