In the summer, when we really want fried potatoes, I always remember this recipe. The author (my virtual friend is also Oksana) called this dish "Tricky Potatoes", but we have more stuck with the name "Secret". But whatever you call it - EVERYONE will like it))

I cut the peeled eggplants into small cubes.
I fry them in parts in vegetable oil. I do not recommend frying everything at once, otherwise they will turn into porridge! I pour so much oil so that the eggplants are not dry. First, they will take oil in themselves, then "give" it. So ready))
Gently, trying to leave the oil in the pan, put the eggplants on a plate. And I fry the rest.
I also cut the potatoes into cubes. Be sure to dry it with paper towels.
Fry the potatoes in a pan until crusty (almost until tender). Then I add the finely chopped onion. I stir and fry for a few more minutes.
At the end, I send the fried eggplants to the pan. Salt the dish and add a little black pepper.
I stir. After a couple of minutes I take it off the fire.
Finely chop the dill. Squeeze the garlic through a press and mix with dill.
I put the potatoes on a plate, sprinkle with dill and garlic. I let it brew a couple of crumples and serve. Incredibly delicious!
In winter, I cook such potatoes from dried eggplant. I just soak, fry and add to the dish))

• Eggplant - 600 g
• Onion - 1 pc.
• Garlic - 3-4 teeth.
• Vegetable oil
• Salt
• Ground black pepper
