Dressing instead of mayonnaise. Even in "Olivier" I sometimes add. And I tried herring under a fur coat with such a dressing - it turns out no less tasty than with mayonnaise, but much healthier!
Today I will prepare a simple vegetable salad, but, I repeat, this dressing is universal - in almost any salad you can use it instead of mayonnaise!
I cut the cabbage into thin strips and put it in a bowl.
Now the cucumber. I remove the tips, cut in half, and then lengthwise.
And with a teaspoon I clean out the middle (the part where the seeds are). Why am I doing this, I have already told HERE.
I cut the cucumber into strips (obliquely) and send it to the cabbage. There the onion (I cut it with feathers). I use red onions. You can take an ordinary onion, but then it is better to pour boiling water over it for a minute to remove the bitterness. I also add canned green peas and finely chopped dill to this salad.
Now refueling. Put 5 tablespoons in a deep plate. Greek yogurt. I always use it. Fat content 4%. You can, of course, replace with sour cream. But with sour cream, the dressing turns out to be more liquid. I add salt and black pepper.
Now about a teaspoon of mustard (I took mustard with honey today). You can use regular mustard and honey separately. If you are allergic to honey, add some sugar. To this I add a little garlic (just a little) and always without a core! The strong smell of garlic is not needed here. I pass it through the press. I add another teaspoon of lemon juice.
I mix everything well.
And I'm dressing the salad.
INGREDIENTS:
• Cabbage (preferably young) - 300-400 g
• Cucumber - 1-2 pcs.
• Canned green peas - 1 small ban.
• Onion - 1 pc.
For refueling:
• Greek yogurt - 5 tbsp.
• Mustard with honey - 1 tsp.
• Lemon juice - 1 tsp.
• Garlic - 0.5 tooth. (be sure to remove the core!)
• Ground black pepper
• Salt
