👌Beets are the simplest versatile vegetable that can be added to many dishes, including salads. The most popular beet salad is the vinaigrette.

Today I want to share with you a recipe for a slightly different vinaigrette - with the addition of one ingredient, which, in my opinion, only improves the taste of this salad. It turns out to be a very successful combination of flavors.

Ingredients for making an "unusual" vinaigrette:

Lightly salted herring fillet - 300-400 g
Beets - 1 pc.
Carrots - 1 pc.
Potatoes - 2-3 pcs.
Onions - 1 pc.
Canned green peas - 3-4 tbsp. l.
Pickled or pickled cucumbers - 1-2 pcs.
Greens, salt, pepper.
For the onion marinade:
Sugar - 1 tsp l.
Salt - 0.5 tsp l.
Water - 2 tbsp. l.
Vinegar 9% - 2 tbsp l.
For refueling:
Vegetable oil - 3 tbsp. l.
Vinegar 9% - 1 tbsp l.

Let's start cooking ...

First, cook and cool all the necessary vegetables - beets, carrots and potatoes. Carrots and potatoes can be cooked in the same saucepan, while beets are best cooked separately as they color the water a lot. Sometimes I do not cook vegetables for vinaigrette, but bake them in foil in the oven at 180 degrees until soft. While the boiled vegetables are cooling down, clean and chop the onion. Put it in a small bowl, add sugar, salt, vinegar and water. Mix everything well and let stand for 15-20 minutes.

Peel the cooled boiled vegetables and cut into small cubes, put them in one large bowl.

We also cut pickles into cubes and add to the rest of the vegetables. Those who love pickled cucumbers can add them to the vinaigrette.

We clean one lightly salted herring and cut it into fillets, trying to remove even the smallest bones. Cut the fish into cubes, like the previous ingredients, and add to a bowl.

Remove the onion from the marinade, squeeze it slightly, add it to the salad. We also put green peas.

For refueling, mix vinegar and vegetable oil. I take unrefined homemade oil, it tastes better and tastes better.

Now pour the dressing into a bowl of salad, salt and pepper to taste, you can put chopped herbs - onions, parsley, dill (who loves what). Stir the vinaigrette and let it brew for a couple of hours in the refrigerator before serving.

The vinaigrette turns out to be hearty, variegated, very interesting in taste thanks to the combination of boiled vegetables and herring. It can be served as a side dish, as a salad or as a main dish. Cook, taste, Bon appetit!
