A delicious and tender berry cake without baking will come in handy on a hot summer day. This is a simple and beautiful jelly cake that perfectly combines sour cream jelly and a sea of fresh berries. The sweet sour cream base balances the berry sourness very well. Due to the fact that the cake is served chilled, it perfectly refreshes.
It can be prepared for every day or as a dessert for a festive table. No one will refuse such a delicacy.
This berry dessert is prepared very simply and quickly, literally in 15 minutes and without baking. The main thing is just to wait until the jelly hardens. I usually pour such a cake into a mold in the evening, and in the morning you can enjoy a delicious dessert for coffee. By the way, you can take any berries to your taste and according to the season.

Ingredients:
- raspberries - 400 g
- blueberries - 200 g
- sour cream - 800 g
- sugar - 1 tbsp.
- water - 100 ml
- gelatin - 30 g
- vanilla sugar - 8 g
Step by step recipe
1. Pour 30 g of gelatin into an iron bowl and pour half a glass of water. Mix everything and leave for about 10 minutes to swell the gelatin.
2. Pour 800 g of sour cream into a separate large bowl. Sour cream can be used with any fat content. Here we add 1 tbsp. sugar and 8 g of vanilla sugar. Mix everything and leave for 5 minutes, so that the sugar dissolves in the sour cream.
3. A detachable form with a diameter of 21 cm, into which we will pour the cake, is tightly wrapped with cling film from the outside so that the liquid does not spill out. You can also pour the cake into a one-piece mold or bowl.
4. The gelatin is already swollen, we put it on a small fire and bring it to a temperature of about 70-80 degrees.
5. Pour hot melted gelatin into the prepared sour cream and mix well immediately.
6. For the cake, you will need about 400 g of raspberries and 200 g of blueberries. Set aside a small part of the berries to decorate the cake on top.
7. Pour the rest of the berries into sour cream jelly and mix gently with a spoon.
8. Pour jelly with berries into the prepared form. Put the remaining blueberries and raspberries on top of the cake.
9. Set the cake to freeze in the refrigerator for about 3-4 hours.
10. The cake is already frozen. Remove the cling film from the mold. Separate the cake from the mold with a narrow thin knife. We open the form and rearrange the cake on the dish. If you are making a cake in a bowl, then in order to get the cake, the bowl must be immersed in hot water for 10 seconds.
Summer berry cake turned out to be very tasty and light. It perfectly combines sweet sour cream jelly with the sourness of ripe berries. Such a cake can be prepared both for home tea drinking and for a festive table.
