I missed Ukrainian cuisine. So today I have dumplings. Real Poltava dumplings))

Fillings, of course, can be anything. But try to cook it according to the recipe. Very, very tasty!

First, I'll prepare the filling. Boil the potatoes in salted water and mash them in mashed potatoes.

I fry the liver for several minutes on both sides (until tender).

Grind the finished liver in a blender and combine with prepared mashed potatoes. Stir well and let the filling cool.

Dough. Sift flour and soda into a bowl. I add citric acid and salt.

I mix dry ingredients and pour in kefir (room temperature, not cold!). I knead the dough. It shouldn't stick to your hands too much (maybe just a little). I put it in a bag and leave it to "rest" for half an hour.

After half an hour, you can sculpt dumplings. The dough is very soft.

I cook dumplings in a double boiler. About 6-7 minutes.

If you don't have a steamer, you can put cheesecloth on a pot of boiling water, put the dumplings and cover with a lid.

I grease the finished dumplings with melted butter.

• Flour - 450-550 g
• Kefir - 300 ml
• Soda - 1 tsp.
• Citric acid - 0.5 tsp.
• Salt
For filling:
• Potatoes - 400 g
• Liver (any) - 200 g
• Salt
*** You can cook with any filling!

Serve with sour cream. This is delicious!

I always add citric acid to the dough and there is nothing to replace it with. You can not add, then the soda needs to be extinguished with kefir, but the dough will be different! Instead of butter, you can use onions fried in vegetable oil or (as they like in our family) - fried pieces of bacon.
