There is no "bright" taste of carrots in the finished dish. The taste is delicate and pleasant. I cook it even for a festive table, it looks amazing.
I discovered this recipe for myself a couple of months ago. After trying it for the first time, I immediately wrote it down in my cookbook. And all the girlfriends took the recipe. You can even cook for breakfast, even for dinner and even for a festive table. π

I heat the oil in a frying pan, put the carrots and carcass until completely soft for about 15 minutes under a closed lid. Do not forget to interfere.
Important! We don't let the carrots cook. We don't need this.
I put the finished carrots on a plate to cool down quickly to room temperature. Who else has such a Soviet plate? π
Separate the whites from the yolks.
I add half a teaspoon of salt to the proteins and beat into a strong foam with a mixer. (It took me 3 minutes).
I add the carrots to the yolks, mix.
Then I gradually introduce proteins and mix.
My advice: so that the proteins do not fall off, you need to interfere with either a plastic spatula or a wooden spoon. It is better not to use metal.
The mass is very airy and light.
I cover the baking sheet with baking paper (the size of the baking sheet is 37x35 cm). It is important to use tested, good baking paper.
I pour out the dough and distribute it evenly.
I cook in an oven preheated to 180 degrees for about 15 minutes.
The carrot crust has cooled down a little, I spread another sheet of baking paper on the table and remove the top sheet of paper. Nothing sticks, everything is fine.
This is the basis for the roll, you don't even need any flour.
Now we will wrap the filling in this roll. You can make the most varied filling, even sweet. For example, beat whites with powdered sugar. This will make a dessert.

I have such a filling: I rub crab sticks on a coarse grater, add a couple of cloves of garlic, mayonnaise and mix.
On a coarse grater, grate another cucumber and remove excess moisture so that the snack does not flow on the table. I spread the crab filling on the roll, then the cucumbers and I also add the Korean carrots. It's already beautiful, isn't it ?!
I wrap the roll quite tightly.
