Today I have for you a recipe for minim pancakes on curd dough.

Why mini pancakes?

Because the pancakes are thin and very tender and in the mini version it is easier to turn them over.

Ingredients I used:

  • cottage cheese 9% - 150 g,
  • milk 1% - 100 g,
  • whole grain rice flour 100 g,
  • 2 chicken eggs
  • 4-5 sachets of sweetener (sachet = 5 g sugar),
  • a pinch of vanillin,
  • baking powder - 1 teaspoon.

Cooking.

Separate the yolks from the whites.

We send the yolks to a bowl with cottage cheese. Add a pinch of vanillin, sweetener and milk there. Mix everything well. It will be good if you beat the dough with a blender, breaking all the lumps.

Add flour with baking powder to the curd and mix.

Important: the amount of milk will depend on the consistency of the curd. The drier the curd, the more milk you need. My cottage cheese is dry enough. At first I added 50 g of milk, but the dough turned out to be very thick and I added another 50 g of milk.

Beat the egg whites until crisp.

Gently add the proteins to the curd dough and mix. Stir gently, lifting the dough from the bottom up.

The dough turns out like this:

I baked pancakes in a non-stick frying pan, sprinkling it with olive oil from a spray bottle - literally 1g of oil.

We spread the dough in a frying pan at a good distance from each other - the pancakes will blur and grow.

Bake over medium heat, covered on both sides.

Decorate with berries and date syrup if desired.
