Khachapuri on cottage cheese dough is a tasty and satisfying dish with a lot of protein.

Khachapuri on cottage cheese dough is a tasty and satisfying dish with a lot of protein.

You asked for a recipe for khachapuri on curd dough, from my menu - I prepared it.

I ended up with a delicious, satisfying khachapuri, in which, moreover, there is not so much flour and a lot of cottage cheese - it turned out to be a protein bomb!

Ingredients for the dough:

  • 200 g of cottage cheese 5%,
  • 100g whole grain flour (I have 60g rice and 40g wheat),
  • 1 chicken egg
  • 1 teaspoon baking powder
  • a pinch of salt and 1/2 teaspoon of dry garlic (optional).

Ingredients for the filling:

- cottage cheese 5% - 100 g,

- cheese (suluguni, mozzarella - in priority) - 150 g.

Cooking.

First of all, we knead my favorite curd dough.

Curd dough is a versatile dough that is also suitable for sweet dishes. This is not dough - this is just a protein bomb!

We mix 200 g of cottage cheese with an egg, salt and garlic (here garlic is optional. I like the aromatic notes that it gives in the end and how it goes with cottage cheese and cheese).

Add flour and baking powder.

Knead the dough. The dough will stick to your hands a little.

It is better not to hammer such a curd dough with flour, then the pastries will be tender and fluffy.

Divide the dough into 3 parts and form cakes with sides. It is better to moisten your hands with water. I sculpted on a silicone mat, on which I baked khachapuri in the future. We pierce the cakes with a fork.

We send the cakes to the oven, preheated to 180 degrees, for 10-15 minutes, so that the dough grabs.

In the meantime, we are preparing the filling. We mix grated cheese and cottage cheese. We leave a little cheese to sprinkle on top.

Over time, we take out the cakes from the oven, put the filling in the middle, distribute and sprinkle with cheese.

Put in the oven for another 10-15 minutes.

The more browned the dough, the crisp it will be and vice versa.
