For a long time I have not prepared liver pâté according to the usual, standard recipe with butter and cognac. I have two favorite recipes that I have not changed for quite some time.
The first version of the pate is more nutritious and richer in taste than the second. The second option is more dietary, but no less tasty and healthy, it is more suitable for those who follow the figure and avoid fried foods.
1. Liver pate with mushrooms.
Ingredients:
Chicken liver - 400 g
Champignons - 200 g
Bulb onions - 1 pc.
Salt, pepper - to taste
Cooking is easy! First, you need to fry the mushrooms in vegetable oil, then send the onions to the same frying pan. After it becomes transparent, send the liver to it. After the liver and onions are ready, you can grind them with a blender into a smooth smooth paste. The pate turns out to be very silky and does not require additional butter.
2. Liver pate without butter (dietary)
Ingredients:
Chicken liver 500 grams
Onion 1 pc
Carrots 1 pc
Boiled yolks 2 pcs
Unrefined olive oil 2-3 tbsp. spoons
Salt, pepper and bay leaves to taste.
To prepare this pate, I do not fry vegetables, but simmer in a pan with the addition of a small amount of water. After the vegetables have become soft, I transfer them to another dish, and send the liver to the pan and simmer the same. Next, I combine everything in a blender, add two boiled yolks and a little olive oil. Grind into a homogeneous mass.
