Today I want to offer you a simple, but very successful recipe for baked meat under a brown cheese crust. In this version, you can cook absolutely any meat, be it turkey or chicken breast, but pork turns out to be the most advantageous dish.

Pork (pulp) or any other meat - 1 kg
Tomato paste - 3 tbsp l.
Sour cream - 2 tbsp. l.
Mayonnaise - 2 tbsp. l.
Mustard with grains (French) - 1 tbsp. l.
Garlic - 2 cloves
Hard cheese - 150 g
Salt, black pepper - to taste.

✨And, of course, the first thing we do is start preparing the meat. This time I take pork (loin), but you can take chicken (breast or thigh fillet), beef, turkey - it will also turn out very, very tasty.

Wash each piece of meat thoroughly and then dry it with paper towels. It is not necessary for water to remain on the surface, it will interfere with the absorption of the marinade. Cut the prepared pork into portioned pieces about 2-2.5 cm thick.

Transfer the chopped meat to any suitable deep bowl and add the tomato paste. If the paste is too thick, it can be diluted with a little boiled water. We tighten the bowl with cling film and put in the refrigerator to marinate for several hours... Yes, yes, we do not add anything else, only tomato paste. Under the influence of the acid contained in tomato paste, the meat fibers will soften, and the pork will turn out to be the most tender, it will literally melt in your mouth.

After a while, you can start preparing the sauce.‡️‡️‡️

To do this, in a bowl, mix sour cream, mayonnaise, mustard and garlic passed through a press. If you don't like store-bought mayonnaise, use homemade mayonnaise, which contains nothing but eggs, vegetable oil and spices.

Mix everything well.

After a few hours, we take out the marinated meat from the refrigerator, sprinkle with salt and pepper, and mix well.

We transfer all the pieces of meat to a baking sheet lined with parchment paper or foil, or in some suitable baking dish.

Grease each piece of meat generously with the prepared sauce.

Sprinkle grated cheese on top of each piece. What grater to grate on is not important, the cheese will still turn into an almost uniform crust during the baking process. And we send to bake in the oven ...
