Meat rolls are always popular on the holiday table, and they are also great for cutting meats.
This meatloaf with pumpkin captivates with its appearance, and it tastes incomparable. The combination of meat and pumpkin is unusual, but, as it turned out, very successful.
Pumpkin combined with garlic and walnuts sparkled with new colors. This filling goes well with meat.
I use beef in the recipe, but you can use pork. It's also important to bake the pumpkin beforehand to cut down on cooking time.
The roll itself is easy to prepare, and it looks bright and festive on the table.

Ingredients:
- beef - 1 kg
- salt to taste
- ground black pepper - to taste
Filling
- baked pumpkin - 120 g
- walnut - 80 g
- garlic - 3-4 cloves
- ground hot pepper - 1/2 tsp l.
- salt to taste
Step by step recipe
1. First, let's prepare the filling for the roll.
Pour 80 g of walnuts into the chopper bowl, put 3-4 cloves of garlic, 120 g of already baked pumpkin, half an hour. l. red hot pepper and salt to taste.
Grind everything until smooth. You can also twist the filling through a meat grinder.
The filling is ready.
2. Cooking meat for a roll.
We need about 1 kg of meat. Wash the meat and dry it with paper towels. I use beef, but you can also use pork.
We cut the meat along its entire length so that the thickness of the meat layer is approximately 1 cm. As you cut, unfold the piece of meat and continue to cut. You should get a rectangular layer of meat of approximately the same thickness.
For the roll, it is advisable to choose tender meat without connective tissue.
We beat the resulting layer of meat with a meat hammer on one side.
3. Salt the meat to taste over the entire surface. Pepper well.
Put the pumpkin stuffing with nuts on the prepared meat.
Spread the filling evenly over the entire piece of meat.
4. Roll the meat tightly on the short side.
5. We tie the roll with culinary thread so that it keeps its shape.
Transfer the prepared roll to the baking sleeve.
We tie the sleeve on all sides.
6. We put everything in a preheated oven up to 180 degrees. We bake for about 45-50 minutes.
7. The roll is baked and cooled down, carefully remove the culinary thread from it.
Before cutting the roll, it is advisable to let it rest for a couple of hours in the refrigerator.
Cut the meatloaf into portions and serve.
The meatloaf stuffed with pumpkin and nuts turned out to be very tasty and satisfying.
Delicate pumpkin with nuts goes well with baked meat and gives a cutaway roll a beautiful and appetizing look.
