There is a lot of cream in this cake. And the cake has an unusual appearance, really similar to a snow-covered volcano that has awakened.
This cake is so easy to prepare that even a novice cook can handle it. And the products for him are all simple and affordable.

Ingredients:

Sponge cake (shape 26 cm)

  • eggs - 4 pcs.
  • sugar - 180 g (1 tbsp.)
  • flour - 120 g (1 tbsp.)
  • cocoa - 25 g (3 tbsp. l.)
  • baking powder for dough - 10 g (1 pack)
  • vegetable oil - 2 tbsp. l.

Cream

  • milk - 1 l
  • sugar - 170 g
  • coconut flakes - 150 g
  • flour - 110 g
  • egg -1 pc.
  • butter - 50 g
  • starch - 1.5 tbsp. l.
  • vanilla sugar - 10 g

Syrup

  • water - 1/2 tbsp.
  • sugar - 1/2 tbsp.

Decoration

  • cream 30% - 150 ml
  • sugar - 1 tbsp. l.
  • thickener for cream - 1 pack (8 g)

Step by step recipe

First, bake a biscuit

1. Break 4 eggs into a bowl. Begin to beat and gradually add 180 g of sugar. Beat eggs with sugar until stiff foam, about 3 minutes.

2. Pour 2 tablespoons into beaten eggs. vegetable oil. We mix everything.

3. Pour 120 g flour, 25 g cocoa and 10 g baking powder into a sieve. We sift everything into beaten eggs in 2 approaches, stirring well with a mixer each time.

4. Pour the prepared dough into a mold, the bottom of which is covered with parchment paper. Mold diameter 26 cm. Spread the dough over the bottom of the mold.
We put in the oven preheated to 180 degrees. We bake the biscuit for about 35 minutes.

5. Pour 0.5 cups of water into a bowl and add half a glass of sugar. We put on fire. Bring the syrup to a boil, boil for 1 minute and remove from heat. Let the syrup cool

Cooking cream

6. Pour 1 liter of milk into a bowl, pour 110 g of flour, 1.5 tbsp. starch, 170 g sugar and break 1 egg. Mix everything immediately with a whisk so that no lumps form.

7. We put on fire. Cook the cream over medium heat, stirring constantly. Please note that it is very important to constantly stir the cream during the cooking process, otherwise it will burn to the bottom.

8. When the cream thickens and boils, remove it from the heat.
Immediately add 50 g of butter and 10 g of vanilla sugar to the cream. We mix everything.

9. Pour 150 g of coconut into the cream and mix again until smooth. The cream is ready.

We fold the cake

10. The biscuit is already cold, we take it out of the mold.

11. Cut the biscuit into 2 approximately equal cakes. Remove the baked crust from the top cake.

12. The bowl in which we will fold the cake is covered with cling film.

13. Carefully place one of the biscuit cakes in a bowl. I put the one that is thinner. Carefully cut off the part of the biscuit that does not fit with a knife.

14. Soak the sponge cake abundantly with sugar syrup. Pour out the still hot cooked cream.

15. Put the second biscuit on top. Cut it out in the shape of a bowl. We also saturate the top biscuit with sugar syrup.

16. Cover the cake with foil and put in the refrigerator to infuse for 4 hours, or better overnight.

Decorating the cake

17. The cake is frozen. We open the film. We cover the bowl with a dish on which we will serve it on the table. And turn over the bowl of cake.

18. Pour 150 ml of cold cream into a dry bowl with a fat content of at least 30%. Pour 1 sachet of cream thickener here. We begin to whip the cream and gradually pour in 1 tbsp. Sahara. Whip the cream until thick.

19. Cover the cake with the prepared cream. First, apply a thin rough coat to nail in the crumbs. And then we apply the remaining cream.

20. We break the scraps that remained from the biscuit and put them in the grinder. Grind everything into crumbs.

21. Decorate the cake with prepared biscuit crumbs. The cake is ready, you can serve it on the table.
