These rolls are a simplified version of the famous Georgian snack. It turns out very tasty and fast!
Ingredients: eggplant, hard cheese, garlic, mayonnaise, vegetable oil, Salt
Cooking method:
Wash the eggplants, cut into thin longitudinal slices 2 mm thick and put in a bowl. Sprinkle with salt and leave for 10-15 minutes.
Rinse the eggplant strips with running water and squeeze carefully. Arrange on a plate and, using a brush, brush with vegetable oil.
Heat the pan well and fry the eggplant strips in portions (about 3 minutes on each side). Transfer the eggplants to a large bowl and let cool (covered!)
Preparing the filling for the rolls: grate the cheese on a fine grater. Add garlic, passed through a press (or chopped with a knife), mayonnaise and mix well.
Spread the strips of eggplant on the table and spread the cheese filling over them (about 1 teaspoon is required for each serving).
Roll eggplants with cheese filling, cover with cling film and refrigerate for 1.5 hours. Sprinkle with herbs before serving. Bon Appetit!
