Today we will learn how to make our favorite rafaelki sweets at home in their vegan (= healthy) version, that is, without condensed milk, waffles (sugar, flour, trans fats), etc.
Ingredients:
1. Coconut - half
2. Almonds - a handful
3. Date - 5-10 pcs (good as a sweetener, but rafaelki will be darker, you can use honey, maple syrup, agave, Jerusalem artichoke ...)
4. Banana - 2 pcs (ripe sweet)
5. Water - 1 cup (for soaking almonds)
6. Vanilla - pinch or drop
7. Dry coconut flakes - half a glass (you can without it)
8. Honey - 1 tablespoon
9. Coconut flour - 1 tablespoon (without it)
Preparation
Soak the almonds in warm water for a couple of hours (you can overnight), peel off the brown film (it can be easily peeled off the wet nut).
We put 10 almonds in a container of any grinder, add coconut there (previously grated on a coarse grater, and for boning sweets, you will need to grate the pulp of the coconut on a fine grater), banana and date pulp, drip a drop vanilla.
Beat thoroughly with a chopper for about a minute until a thick homogeneous mass. We get a pasty substance (if you want thicker, you can mix it with coconut flour). We place it in a small bag and put it in the refrigerator for a couple of hours.
We take out and sculpt rafaelki. Chipped off part of the dough, rolled into a ball, crumpled into a cake, put an almond, rolled into a ball, coated with honey and rolled in dry coconut flakes (they took the chips already ready or grated their coconut on a fine grater and dried it on battery).
