If you want a delicious sauce, go for quality products.
I use olive oil - Extra Virgin is better. You can use any vegetable oil you like.
Seasoning mix: oregano, basil, thyme and sage.
Instead of all listed spices, you can use a mixture of Provencal herbs.
Real Tomato Pizza Sauce
- The tomatoes need to be washed well and cored.
- Make a deep cut, but not completely, and just crush it with your hand.
- This will help the tomatoes give off juice more easily.
- Crush the garlic with a knife.
- Heat the olive oil a little in a saucepan.
- Put the garlic in it.
- When the garlic has warmed up a little, put the tomatoes in a saucepan.
- As soon as the juice has boiled, pour out all the seasonings, stir, close the lid, reduce the heat and leave on 40 minutes.
- In 40 minutes remove the peel from the tomatoes and grind the mass with a blender.
- Or, if you want to get a real tomato sauce, grind all this mass through a sieve.
- Return the resulting sauce to the same bowl where the tomatoes were stewed and bring to a boil.
- Increase the heat and, with the lid open, boil the sauce to the desired thickness.
- This pizza sauce can also be made from canned tomatoes.
- The sauce has boiled down to the thickness I need. It took me 30 minutes.
- Now you need to salt and pepper it.
- You can use red, black, or a mixture of peppers.
- I'll add some sugar.
- Boil for another minute and you can remove the sauce from the stove.
- Note that it will thicken a little more as it cools.
- From 1 kg of tomatoes, 300 g of a wonderful tomato sauce for pizza turned out.
