Today I want to share a recipe for delicious airy, quick pies, the dough is cooked on a custard basis and not takes a long time to proof the dough, you just need to knead the dough and you can start sculpting pies. As a result, the pies are soft, and I will also share the delicious apple filling and the Adyghe cheese filling.

Mom was visiting me, having tasted such pies, she said that now it will be her favorite dough.

Recipe: (250ml glass)

For the test:

For the custard base:

Flour -3 tbsp (with a slide)

Salt -1 tsp

Sugar -1 tbsp

Vegetable oil -3 tbsp.

Boiling water - 250 ml (1 st)

To knead the dough:

Raw yeast -25g (or dry 11g)

Warm water - 250 ml (1 st)

Flour -550-600g (4st)

For apple filling:

Apples -1kg

Sugar -2-3 tbsp.

Lemon juice -2-3 tbsp.

Vanillin - to taste

Butter -30g

For the Adyghe cheese filling:

Adyghe cheese -150g

Salt -1 / 3 tsp.

Green onions - optional

COOKING METHOD

And so let's do the test.
Put 3 tablespoons in a bowl. with a slide of flour, add 1 tbsp. sugar, 1 tsp. salt, 3 tbsp. vegetable oil.
We mix. Now pour in 250 ml of boiling water, freshly boiled water. Mix vigorously until smooth. And leave to cool a little, to 40 degrees.
Pour 250 ml of warm water at about 40 degrees into another bowl, add 25 grams of raw yeast, you can add dry yeast 11 grams.

Stir until the yeast dissolves. If you are not sure about your yeast, let it sit for 10 minutes to make sure the yeast is working.
I have fresh yeast, I pour water with yeast into a warm custard base, mix everything again.
And add the sifted flour, knead the dough, I need 550-600 grams of flour. The dough should be soft so that flour does not clog the dough, I grease my hands and the table with vegetable oil about 2-3 tbsp. and knead the dough.

The dough is already ready, you can immediately start forming the pies.
I cover with a plate and leave for 5-10 minutes for the dough to rest a little. This is how the dough rose in exactly 10 minutes.

By the way, since the dough is prepared quickly, the filling can be prepared in advance.
I have 2 fillings today. The first apple.
We take 1 kg of apples, peel and rub on a fine grater.
Put in a frying pan, pour with lemon juice 2-3 tbsp. or to taste
Close the lid and simmer the apples until cooked for 5 minutes.

Now add 2-3 tbsp. sugar or to taste, add vanillin and add 30 grams of butter. Stir fry until the liquid evaporates. Approximately 5 minutes. If desired, you can punch with a blender. The filling is ready, remove and let it cool. By the way, with such a filling, very tasty stuffed pancakes.
The second filling is from Adyghe cheese.

I just cut the cheese 150 grams and wrinkle it with a fork, add a little salt to the filling. You can add green onions. By the way, if you have not tried such a filling, I recommend this very tasty filling for pies.
We knead the dough and divide it into parts, I divide it into 24 parts weighing 50 grams.
I make buns, take one bun and make a cake with our hands, put the filling, pinch the edges, so that later you can it was to determine where the filling is, with the apple filling I make the pies rounded, just pinch the ends.

I form all the pies at once, and then I start only frying.
We take a frying pan and pour in vegetable oil, so that the butter covers the pie by half.
We heat up, put the pies and fry on low heat on both sides until golden brown, so that the pies have time to fry.
We remove it on a paper towel.

The pies will definitely surprise you, they have been tested more than once on friends. The pies are airy, soft, I recommend that you use the recipe and you will understand what I mean.
