Today I want to share the recipe Almond cake "Riddle". Moderately sweet and unusual in taste and it is not usually prepared, even flour is not required. The first time I tried such a cake was in the Ikea restaurant, I liked it so much that I decided to cook it at home and now I finally came up with the perfect recipe. Tasty and cheap and easy to prepare.

Recipe:

For the cake:

Egg white -4pcs

Powdered sugar -100g

Almonds -250g

Salt -1 / 4 tsp.

For the yolk custard:

Egg yolks -4pcs

Sugar -100g

Corn starch -1 tbsp (20g)

Milk -150ml

Butter -50g

Almond petals - for decoration

COOKING METHOD:

And so, for a start, take 250 grams of almonds, grind them into crumbs using a blender.

Add 100 grams of powdered sugar and mix.

Divide 4 eggs into white and yolk, while putting the yolks aside.

Add a pinch of salt to the proteins and beat with a mixer until persistent peaks.

Now add the proteins to the nuts with powdered sugar in 2-3 doses and mix. I don't add baking powder.

We take a mold, the diameter of my mold is 22 cm, grease with oil and pour the dough. We put in the oven and bake at 180 degrees until cooked for 25-30 minutes, be guided by your oven. During this time, we will prepare the cream.

We put 150 ml of milk to warm up to about 60 degrees.

Put 4 yolks, 100 grams of sugar, 1 tbsp in a saucepan. corn starch, by weight it is 20 grams, if there is no starch can be replaced with flour.

Stir with a whisk, now pour in the warmed milk, stirring constantly. We put on a small fire and cook, stirring constantly until thickened. As the mass thickens, immediately remove it from the heat, you should get such a smooth homogeneous mass. Cover with a film in the joint and leave to cool to room temperature. If you need it quickly, you can put the pot in cold water.

Put the cooled custard base in a bowl, add 50 grams of soft butter and beat with a mixer until fluffy.

The cream is ready.

Put the finished cake on the wire rack and let it cool, cut the cooled cake into 2 cakes, first make a cut in a circle with a knife, and then cut it with a thread.

We put one cake, and grease it with half of the cream, put the second cake, grease the sides and top of the cake with the second half of the cream. Sprinkle the top with almond petals.

Let the cake stand for an hour at room temperature and put it in the refrigerator to make the cream stronger.

Now we take out and cut into portions. (see how the cake looks in the context of the video)

Pour a cup of tea and enjoy. The cake is really a mystery, since you cannot immediately understand what it is made of.
