Ingredients:

Cakes:

  • water - 200 ml
  • eggs - 4 pcs.
  • flour - 130 g
  • butter - 125 g
  • salt - 1 pinch

Cream:

  • cream 33% - 500 ml
  • sugar - 100 g
  • vanilla sugar - 10 g
  • thickener for cream - 8 g

Decoration:

  • white chocolate - 100 g
  • black chocolate - 25 g
  • cream 10% - 50 ml

Step by step recipe

Cooking cakes

1. First, prepare the choux pastry cakes.
Put 125 g of butter in a saucepan, pour 200 ml of water and add a pinch of salt. We put everything on fire.

2. As soon as the mixture boils, pour 130 g of flour into it and immediately stir vigorously until smooth. When brewed correctly, a thin coating should form on the bottom of the pan. We remove everything from the fire.

3. Immediately, without waiting for cooling, add 4 eggs one by one. After each egg, mix the dough until smooth with a mixer or spoon.
The dough should be soft, smooth and shiny.

4. Divide the whole dough into 2 parts. We put each of the parts in a separate baking dish, the bottom of which is covered with parchment paper. Smooth the dough along the bottom of the mold. The diameter of my molds is 21 cm.

5. We put everything in the oven preheated to 210 degrees, bake for 10 minutes. After 10 minutes, reduce the temperature to 180 degrees and bake for about 30-40 minutes more. If the oven does not fit two forms at once or you do not have two identical forms, then you can bake one cake at a time.

6. Let the prepared cakes cool completely.
We cut each of the cakes into 2 parts.

Cooking cream

7. Pour 500 ml of cold cream with 33% fat into a bowl. Begin to beat at low speed and gradually increase the mixer speed to maximum. After about half a minute, we begin to add a little sugar to the cream, without stopping whipping. All you need is 100 g of sugar. Also pour 10 g of vanilla sugar into the cream.

8. When the cream is half whipped, add 8 g of cream thickener to it. Continue whipping until the cream is thick enough and keeps its shape well.
You can also use cream with a fat content of 36%, then a thickener is not needed.

9. Put the whipped cream into a culinary bag with an open asterisk attachment.

We fold the cake

10. We put the bottom of one of the cakes. Apply cream to it. First, place the cream along the edge with roses. Just fill the middle with cream.

11. Put the second cake on top. Apply the cream on it in the same way.

12. We cover with the next cake, I took the top of the cake and put it cut up. Apply the cream.

13. We put the last cake upside down so that the cake is smoother.

Decorating the cake

14. Now let's start decorating the cake.
Break 100 g of white chocolate into a bowl. Pour about 25 ml of cream with 10% fat to it. We put everything in the microwave and heat the chocolate for 10 seconds, stir it and, if necessary, heat it up again for 10 seconds. We mix.

15. Likewise, break 25 g of dark chocolate into a bowl. Pour in 10-15 ml of 10% cream. We drown in the microwave.
Be careful not to overheat the chocolate, or it may curdle. If the chocolate is thick, then add more cream, first heating it.

16. Place the dark chocolate in a culinary bag.

17. Apply melted white chocolate to the cake and distribute it evenly throughout the cake.

18. Apply the dark chocolate using a culinary bag in thin strips, approximately at the same distance from each other. While the chocolate is not frozen, take a toothpick and draw lines, alternating their direction.

19. The cake is ready, we put it in the refrigerator to freeze the chocolate.

We rearrange the finished cake on a dish.
Eclair cake turned out to be very tasty and tender. It is beautiful at home, it is quite simple to prepare and relatively quickly. You can also add berries or canned peaches to this cake.
