I am amazed by people who deprive themselves of a lot of tasty things under the contrived pretext of authenticity.

Recently I published a recipe for seashells with cheese, so an indignant comrade wrote in a personal note, they say, where can an ordinary Russian citizen get ricotta and mozzarella?

To my answer that in the store (the most common one, I always take it there) came:

- But they are not real! They are not from Italy! And if you look from Italy, you need to have your own plane so that you can deliver from a normal manufacturer.

Otherwise, the dish will not be the same, but if not, why cook it ???

To admit that I was stunned is to say nothing. According to this logic, the whole world should give up everything that contains mozzarella and ricotta, if only because Italy does not produce these cheeses in volumes that can saturate the market on planet Earth.

And, whatever you want, but this “desire for authenticity” is a show-off. Where did they come from? The devil knows, probably, because for a very long time the idea was imposed that it was a shame to be not an oligarch.

As in the advertisement, "we deserve it," huh?

But in relation to food, we are all worthy of simply high-quality and delicious products. It doesn't matter where they are produced.

Believe me, only a few will distinguish a good mozzarella made in our country from those made in Italy. And this applies to absolutely all products.

Yes, if you replace one product with another, then there will be a difference in the final result. If you take another good cheese instead of Parmesan, the taste will change, but it will still be a delicious cheese dish.

If they ate chorizio sausages in Spanish lentil stew with hunting sausages, then it will no longer be a Spanish stew, but based on its motives, but this it will still be tasty, and also unusual, because the combination of lentils, celery and tomatoes for our kitchen is foreign, and, therefore, not boring.

And so with a lot of recipes that can be rejected for the reason "we will not ensure the authenticity, why cook."

Christmas trees, guys, well, really... Why cook? Yes, to eat delicious!

By the way, with authenticity. I myself once bother with it. Until the cinnamon rolls were... thrown away.

I bought authentic cinnamon. The real one. Not the one sold under the guise of cinnamon, crushed cassia bark, like, but Ceylon.

It tasted unusual and not cinnamon at all.

So authenticity is not always needed.
