And today I want to share with you a great recipe unmatched fasting pie - after all, it is at this time that you want something sweet more than ever! This cake is so simple and yet delicious that you probably won't notice the lack of eggs, butter and even milk in it. How many times have I cooked this pie and treated my friends to it, no one guessed what it was made of!

📕Ingredients for Lean Pie:
Water (juice, compote, tea) - 350-370 ml
Wheat flour -350 g
Lemon - 1 pc.
Unscented sunflower oil - 50 ml
Sugar - 180 g
Vanillin - a pinch
Salt - a pinch
Soda - 1 tsp l.

We take any container convenient for you for making the dough and pour all the bulk ingredients into it, except for soda - flour (be sure to pre-sift!), granulated sugar, salt and vanillin (can be replaced with vanilla sugar or extract). The amount of sugar can be decreased or increased, which is why everyone loves different degrees of sweetness in baked goods. In addition, you should take into account what exactly you are preparing the pie - in plain water or in juice. If the juice is sweet, in principle, 130-150 g of granulated sugar will be enough. We also take one lemon, scald it with boiling water and remove the zest from it with a fine grater, and then pour it into a bowl as well. We mix everything together.
Now add liquid - juice or water. This time I have multifruit juice available, but the cake is also very tasty with ordinary water. The juice should be at room temperature, and the water can even be slightly warmed up.
And stir thoroughly with a whisk, trying to grind all the small flour lumps.
We extinguish the soda with lemon juice and pour it into the dough. We mix.
Add oil at the very end. Better, of course, to use refined so that the cake does not acquire a foreign smell.
Stir the dough for the last time, the oil should completely disperse through it. The dough will turn out to be pouring, buttery, but not very dense due to the presence of slaked soda in the composition.
Next, take any suitable baking dish and pour in the dough. I had a silicone mold, so I didn't add oil to it. If the form is metal, it is better to cover it with baking parchment or grease with oil and sprinkle with crushed breadcrumbs or flour.

And such a cake is baked in an oven preheated to 180 degrees for 45-50 minutes. Before you get the pastries, check their readiness with a toothpick.
