On Shrovetide, and not only, many housewives want to please the family and guests with delicious thin pancakes. There are a lot of pancake recipes, but, unfortunately, they do not always work out. After all, authors often keep silent about important nuances.
I offer you a time-tested recipe for thin pancakes in milk. They turn out to be delicate and fragrant, do not tear and are suitable for any filling. Below I will share with you all the secrets of thin and delicious pancakes. And you don't need to add soda and baking powder to them - you will definitely get these pancakes!

Ingredients:

  • milk - 3 tbsp.
  • flour - 2 tbsp.
  • eggs - 2 pcs.
  • butter (for lubricating pancakes) - 50 g
  • vegetable oil - 2 tbsp. l.
  • sugar - 1/2 tsp l.
  • salt - 1/2 tsp l.

Step by step recipe

1. I want to warn you right away that all the ingredients from which we will knead the pancake dough must be at room temperature.
Break the eggs into a bowl and add sugar and salt here. Stir the eggs until the sugar and salt are completely dissolved. I do this with a mixer, but you can also use a regular whisk.

2. Pour about 100-150 ml of milk from the total amount into the egg mixture. And beat again.

3. Add flour to the mixture of milk and eggs. Mix everything until smooth and homogeneous. The dough should be smooth and lump-free.

4. Pour all the remaining milk into the dough. And again mix everything well.

5. With this method of adding milk to the dough in 2 approaches, we ensure that there are no lumps in the dough.
This is how the dough turns out - everything is homogeneous, liquid and without lumps.

After kneading the pancake dough, he needs to be allowed to rest for 15-20 minutes, so that the gluten in the flour swells and thin pancakes do not break during baking.

6. 15 minutes have passed, the flour in the dough has swollen and you can fry the pancakes. But before frying, add 2 tbsp to the dough. l. sunflower oil and stir. This will prevent our dough from sticking to the pan.

7. I will bake the pancakes in a pan that is specially designed for baking pancakes. If suddenly you want to buy such a frying pan, then please note that it must be heavy. This means that it has a thick bottom. In a light skillet with a thin bottom, the pancakes will burn and will not work for you.
But you can also bake pancakes in the most ordinary pan that you have.

8. Put the pan on fire and grease it with sunflower oil before the first pancake. We are waiting for the pan to heat up.
Pour the dough into a hot frying pan. Pour it into the center and distribute it by tilting it over the entire pan.

9. Since everyone has different flours, the dough in the proportions that I gave can turn out to be either thick or, on the contrary, liquid. If the dough is too thick and does not spread well in the pan, then you need to add a little more milk or even water to the dough.
If the dough is thin, the pancakes will tear. Then add more flour to the dough and mix well.

10. As soon as the edges of the pancake began to peel off the walls of the pan, turn it over to the other side. On the other hand, fry the pancake until it is browned. It takes much less time than frying on the first side.

11. Immediately put the pancakes on a plate.
I want to note that when frying all subsequent pancakes, the pan does not need to be oiled, because the butter is already in the dough and the pancakes will not stick to the pan.
But if you suddenly need it, then of course you can grease the pan additionally.
Stir the dough a little before each pancake to evenly distribute the butter in the dough.

12. While the pancake is still hot, grease it with melted butter on top. The butter will give the pancake a delicate creamy aroma and wonderful taste.
From this norm of the test, I got 15 pieces. pancakes. The diameter of my pan is 25 cm.

Pancakes can also be made sweet by adding 2-2.5 tbsp. l. sugar when kneading into dough.
You can wrap any filling in pancakes - meat, fish, mushroom, vegetable. Or a sweet filling - cottage cheese, fruit, berry.
But the simplest filling option for pancakes is jam, jam, honey, or just sugar.
