Russian yeast pancakes with holes
- Add fresh yeast to warm water.
- This also includes sugar and sifted wheat flour.
- Mix everything and remove the dough for 3 hours into the switched off warm oven.
- When time has passed and the dough has risen well, separate the egg yolk from the egg white.
- Add the egg yolk to the dough and stir it well.
- Leave on the table for another half hour.
- Add 1/4 tsp to the egg white. salt and beat until fluffy.
- Add the egg white to the dough and stir in gently.
- Bring milk to a boil.
- Before frying, add 300 g of boiling milk to the dough and stir immediately.
- These pancakes are best fried in ghee.
- Grease the pan with plenty of oil. (I keep the heat just above average.)
- Adjust to your stove so that the pancake has time to cook.
- This is what real Russian pancakes are.
- They can be eaten by themselves, with sour cream, honey, jam, caviar, red fish, etc.
- In general, there is enough imagination for that. These pancakes are versatile.
- They are not even openwork, but rather with such large holes.
- From this amount of dough, I got exactly ten full-fledged pancakes.
Recipe for Russian yeast pancakes:
250 g water
250 g flour
4 g fresh yeast
20 g sugar
1 egg
1/4 tsp salt
150-300 g milk (depends on how thick you want the pancakes)
