Hello, dear readers of the "Cooking with Natalia Kalnina" channel! I greet my regular guests, as well as all those who came to see me for the first time!

Today I want to share the recipe for the handpieces. This is how my great-grandmother cooked, then my grandmother, my mother cooks and now I cook this way. This traditional dish in our family is always prepared only for Shrovetide. We always cook a lot, because it is very tasty and that would be enough for everyone. They are small in size, one can say for one bite. The dough for these patches is prepared on eggs. As I said, I cook a lot at once. If you want to cook less, divide all the ingredients by 2.

Recipe:

eggs -10 pcs.

milk -1l

potato starch -10 tbsp. (150g)

salt -1 tsp

sugar -2 tbsp

vegetable oil -2 tbsp.

For filling:

cottage cheese -1kg

sugar -3-4 tbsp. (or to taste)

eggs -2pcs.

butter -200g

COOKING METHOD:

And so let's get down to preparing the dough.
Break 10 eggs into a bowl, add 2 tbsp. sugar, 1 tsp. salt.
10 tbsp starch, by weight I have it 150 grams.

Mix everything with a whisk so that there are no lumps and pour in 1 liter of milk. Mix again and pour in 2 tbsp. vegetable oil.
We will definitely let the dough stand for 15 minutes, then the pancakes will not break and even the first pancake. The dough turns out to be liquid, it should be so.
I fry in a 22 cm frying pan.

For the first pancake I grease the pan, then I bake without greasing. Pour in some dough and distribute over the pan.
You can fry on one side, I turn it over and fry the other side for literally 2-3 seconds.
The pancakes turn out to be thin, but at the same time they do not break and easily turn over, so that I bake it faster in 2 pans at once.
It turns out that such a stack of pancakes turns out.

Let's prepare the filling.
We take 1 kg of cottage cheese, break 2 eggs and add 2 tbsp. sugar, if you like sweeter add more sugar.
Stir the filling ready.

I cut the pancakes into 2 equal parts, take half of the pancake, put about half a tablespoon of cottage cheese. We bend the edges and wrap them up, we get such patches.

My grandmother used to languish them in a large cast iron, I take a cast baking sheet, it is heavy and keeps heat well. Butter 150 grams or you can melt it to taste. Grease a baking sheet with butter, put a layer of leaflets, then grease with well-melted butter and put the next layer.

Cover with foil and put in the oven. We simmer the patches at 160 degrees for 1 hour.
Now we take out and serve them ss in the heat of the heat to the table.
How delicious it turns out, I want to say that they are not at all like ordinary pancakes with cottage cheese. Try it and see for yourself. Especially since Maslenitsa is coming soon.
By the way, I want to add that my grandmother used to cook starch herself, rubbed raw potatoes, squeezed the juice, waited for the starch to settle, then drained the potato juice, washed the starch in water and dried it.
