- When the mass becomes fluffy, add sugar in parts.
- And beat the egg whites until soft peaks.
- The mass should be stable, but no hard peaks.
- Stir the chocolate mass again.
- Put the beaten egg whites into it.
- Gently mix everything with a spatula so as not to precipitate the proteins and

- Immediately spread the homogeneous mass into molds so that 1 cm remains to the top edge.
- Move to the oven on the lower level and quickly close the door.
