I show you how to make a chocolate-vanilla cake, which in the USSR was called "Zebra", and abroad they are called "Marble".
Recently I studied desserts, which were most often prepared in Soviet kitchens. It turned out that one of the most popular was the Zebra cupcake.
I started looking for his recipe and found out that a similar cake was baked abroad, only there it was called "Marble". The recipe interested me and I decided to cook it.

A step-by-step recipe on how to make a “Marble” cupcake
Ingredients for a 20x10 cm mold:
- Butter 190 g (room temperature)
- Sugar 150 g
- Eggs 3 pcs
- Flour 190 g
- Baking powder 5 g
- Dark chocolate 100 g
- Cream 30% 50 g
Grind butter at room temperature with sugar with a silicone spatula. Then I beat with a mixer until fluffy.
Without stopping the mixer, pour in the eggs in turn and beat the mass until smooth.
Sift dry ingredients and mix with a spatula.
I divide the dough into 2 equal parts. I melt the chocolate in advance and mix it with the cream. I add the chocolate mass to one of the halves of the dough and mix until smooth.
I transfer the chocolate dough to the white part and mix a little, but so that the dough simply combines.
I put the dough in a mold and send it to bake for 50 minutes at a temperature of 160 ° C. The baking time depends on your oven, so it's best to check the doneness with a dry skewer.
After baking the cake, let it sit completely on the wire rack. Then I wrap it in plastic wrap and put it in the refrigerator for 3-4 hours.
While the cake is in the refrigerator, moisture inside it will be evenly distributed throughout the entire volume of the cake. Due to this, it will not be dry at the edges and wet in the center.
Glaze with nuts
- Dark chocolate 180 g
- Vegetable oil 40 g
- Nuts 50 g
Melt the chocolate to a liquid state, add vegetable oil and mix until combined. At the end I add finely chopped nuts. I used walnuts, but the variety is not important here.
Before icing the cake, I put it in the freezer for 20-30 minutes. Due to this, the glaze will set faster.
I put the cupcake on the wire rack, pour it with icing and put it in the refrigerator until the glaze sets. Let's show you what a cutaway cupcake looks like.
In the cut, the cupcake really looks like marble. The taste is amazing, and I would have eaten this cake even without the chocolate icing, but it certainly tastes better with it.
