Well, yeah, processed cheese is delicious. Especially if it is made from good products, and not ersatz substitutes, seasoned with real spices, and, as they say, with love. I would even add - with love for food and myself.
Cream cheese sandwich for breakfast and even as a snack is a very good thing. Or you can not make a sandwich. You can, for example, put processed cheese on an egg. Or even use it with potatoes.
There are a lot of options.
The only bad thing is that there is a lot of processed cheese in stores, but there is not enough tasty cheese. I don’t know about you, but I lack taste in industrial melted spreads. They are kind of flat. And it's scary to look at the composition.
Meanwhile, processed cheese is easy to make at home.
We take:
- Three hundred grams of good grained cottage cheese (the main requirement is that it be made from milk, and not from you don’t understand what);
- 150 grams of cream cheese (a la Philadelphia or mascarpone);
- 200 grams of butter (real, without any palm additives);
- 170 grams of concentrated milk (condensed milk without sugar);
- About 200 milliliters of high fat cream;
- A level teaspoon of baking soda;
- Spices to taste.
How we cook:
First of all, we pour concentrated milk into a saucepan, then we send cottage cheese and cream cheese broken into pieces, and we begin to heat it all over very low heat. At the same time, so that it does not burn and does not stick to the walls and bottom, we constantly stir.
When the cheese has melted, add the butter cut into pieces and continue to stir.
Add soda when the whole mass becomes smooth and shiny, mix everything thoroughly again, let it pause and stir in the spices and cream in the warm mass. You can reduce the amount of cream if you want a thicker mass.
We stir for a long time so that the consistency is homogeneous.
It is very tasty when this cheese contains caraway seeds.
