Domoda: a stew originally from the Gambia, which is eaten in Russia for a sweet soul

In general, it comes from Africa, specifically, as they say, from the Gambia, and the ingredients included in the authentic version of domoda are almost unavailable in our country. But this does not mean that it is impossible to cook domodu in Russia.

All over the world - they cook, and at the same time they are not especially steamed with authenticity. Here, rather, the principle is important, and the main ingredient, whatever one may say, is peanut butter (only unsweetened).. cooking it at home, by the way, is not so difficult - fry the peanuts, peel them of red scales and punch in a blender until they become oily.

That's it, the pasta is ready, you can make a domodu!

We take:

  • Three large onions;
  • Several large potatoes;
  • Chicken breast - 250 grams;
  • Three large tomatoes - or as much tomato paste as you think these three large tomatoes will replace;
  • Peanut butter - one hundred grams;
  • Seasonings, herbs, salt - to taste.

Well, you will need oil - for frying. Ideally - also peanut, but if it is not, then any will go.

How we cook:

Cut the onion into small cubes, and the potatoes and chicken just into cubes. Ideally the same.

Fry the chicken, salt, pepper, add the selected seasonings (paprika goes well, it seems to me, but this is my taste).

As the meat is browned, add onions and potatoes to it, and fry everything together for about five minutes.

Then add about half a liter of water and chopped peeled tomatoes or tomato paste. Simmer for about 10 minutes over low heat.

Further, peanut butter goes into the pan and, if the consistency is too thick, then a little more water.

Cook for 30 minutes, stirring occasionally. Traditionally, this stew is eaten with couscous, but you can do without a side dish!
