Ingredients:
- potatoes - 500 g
- minced pork and beef - 500 g
- hard cheese - 200 g
- cream 20% - 200 ml
- flour - 3 tbsp. l.
- onion - 1 pc.
- green onions - bunch
- dill - bunch
- salt - 1/2 tbsp. l.
- water (broth) - 2 l
- ground black pepper - 1/2 tsp l.
- vegetable oil - for frying
Step by step recipe:
1. Cut one onion into small cubes. We also finely chop a bunch of green onions.
2. Pour some sunflower oil into a 4-liter saucepan with a thick bottom. Put the chopped onion and sauté until golden brown. If the pan is not thick-bottomed, use a skillet.
3. Add half a kilogram of ground pork to the gilded onion. Fry everything over medium heat until the minced meat changes color.
4. Add chopped green onions to this, mix.
5. Pour 3 tbsp here. l. flour. Mix everything again. Fry for another 1-2 minutes.
6. Pour 2 liters of water into a saucepan and mix, breaking lumps of minced meat.
7. While the soup is boiling, cut 4 medium potatoes into small cubes.
8. The soup has boiled, remove the foam formed from it. Add the prepared potatoes to the soup.
9. Cover the saucepan with a lid and cook for about 10 minutes.
10. After 10 minutes, add 200 ml of cream with 20% fat. We mix everything. Add half a tablespoon of salt and pepper to taste.
Cook for another 5-10 minutes, until the potatoes are ready.
11. We prepare the rest of the ingredients. Three 200 g of cheese on a coarse grater, I took cheddar cheese, but you can take any hard cheese that melts well. Finely chop a small bunch of dill.
12. At the end of cooking, add grated cheese to the soup and stir until it dissolves. Add chopped dill, stir and remove from heat.
Serve the soup hot with croutons or croutons. The soup turned out to be very tasty, satisfying and aromatic. It perfectly combines delicate creamy broth with minced meat pieces. Be sure to make this restaurant-grade soup at home.
