Unusual and delicious soup with meatballs and lumaconi pasta, which is perfect for lunch. Lumaconi is a large-sized Italian pasta in the shape of snails. It is intended for stuffing and baking. For the soup, we will also fill the lumaconi with minced meat.
This soup turns out to be tasty and rich, and large shells with minced meat make it unusual.

It takes very little time to cook. Even a novice hostess can handle this recipe. And this first course will appeal to both children and adults. For greater satiety, it can also be cooked in meat broth.
Prepare such a delicious, hearty and quick soup for your family, diversify the menu!

Ingredients:

  • water - 3 l
  • minced pork and beef - 500 g
  • lumaconi paste - 250 g
  • potatoes - 2-3 pcs.
  • onions - 2 pcs.
  • carrots - 1 pc.
  • vegetable oil - for sautéing
  • salt to taste
  • dill
  • bay leaf - 1 pc.
  • ground black pepper - to taste

Step by step recipe

1. First, let's prepare the minced meat.
Cut one small onion into small cubes. I only use half of the onion as it is large.

2. Put the chopped onion in the minced meat. Salt minced meat to taste and pepper. Mix everything well. I use 0.5kg of ground pork.

3. We take 250 g of lumaconi pasta and fill it with prepared minced meat. It is convenient to stuff the lumaconi with a teaspoon.
Pour about 3 liters of water into a 4-liter saucepan and put it on the stove to boil.

4. While the water is boiling, on a coarse grater three 2-3 medium-sized potatoes.
The water boiled. Put grated potatoes in a saucepan.

5. Add lumaconi with minced meat to this. Salt the soup with about half a tablespoon of salt. Mix everything a little and leave the soup to cook over low heat for about 15 minutes. How long to cook lumaconi, see the package. It is advisable not to cook the pasta a little. In the process of infusion, the lumaconi will reach the desired consistency.
Water with lumaconi and minced meat has boiled, remove unnecessary foam with a spoon. If, in the future, foam forms during cooking, it is advisable to remove it. This will not affect the taste of the soup, but it will look prettier and more appetizing.

6. While the soup is boiling, prepare the sauté.
Cut 1 onion into small cubes.
1 carrot, three on a fine grater.

7. Put the onion in a frying pan with a small amount of vegetable oil. Pass it until golden. Add grated carrots to the onion. Mix everything and sauté for a few more minutes until the carrots are soft.

8. Lumaconi with minced meat are cooked. Put the vegetable sauté in the soup. We also throw 1 bay leaf here and pepper to taste.

9. We also add herbs to the soup. I use frozen dill.
The soup is ready, you can serve it.
