✅👌Each housewife from time to time asks the question, what can you quickly and tasty bake for tea with your household?
Today I want to offer you a recipe for a soft and tender cake, with which you may add to your collection of cake recipes!
✨ It's easy to prepare, you don't even have to pick up a mixer. The dough based on kefir is kneaded in a couple of minutes. The juicy cottage cheese filling is made in the same amount.
✨ Fast, simple and all the ingredients are simple and affordable. 🥰
📕Ingredients for making the cake: 🍲
Kefir (any fat content) - 200 ml
Soda - 0.5 tsp
Eggs (category C-1) - 3 pcs.
Sugar - 200 g (in dough) and 3 tbsp. l. For filling
Vanillin - a pinch
Vegetable oil - 100 ml
Wheat flour - 300 g
Baking powder - 1 tsp l.
Cottage cheese (9% fat) - 360 g
Lemon zest - 1 tsp l. (optional).

✨ Kefir for making such a cake should be at room temperature, so do not forget to get it out of the refrigerator in advance. If you forgot, then just slightly heat it up in the microwave or on the stove. And besides, I advise you to take kefir, not "daily", which was just cooked, but which has already stood in the refrigerator for several days. In such kefir, there is much more acidity and the pie from it turns out to be incredibly airy and fluffy.
Pour kefir into any suitable bowl for kneading dough. Add baking soda, stir and let stand for a couple of minutes. The quenching reaction will begin, the kefir will acquire a foamy consistency and will noticeably increase in volume.
Pour in vegetable oil, break 2 eggs (we leave 1 for the curd filling), add sugar and vanillin to taste.
Mix everything well with an ordinary whisk or fork for a few minutes, until the sugar dissolves.
Now sift the flour, mix with baking powder and add to the dough.
Mix everything thoroughly, breaking the flour lumps. The dough will be fluid, smooth, shiny and buttery. In consistency, it will be somewhat heavier than biscuit due to the greater amount of fat in the composition.
Now we turn to the preparation of the curd filling. Put cottage cheese in a bowl, add the remaining egg to it, a few tablespoons of sugar (the amount I indicated can be changed to taste). Also rub the zest from half a lemon on a fine grater.
✨ This ingredient is optional, but lemon just goes well with curd!
We grind everything with an ordinary fork, trying not to leave large lumps in the curd. Done!
Pour the prepared dough into any suitable baking dish (diameter of my dish is 24 cm). I had a silicone one, so I don't lubricate it with anything. But the metal form must be covered with parchment or greased with a small amount of vegetable or butter, and then tied with flour or semolina. On top of the dough, using a tablespoon, lay out the curd filling in small "balls" over the entire surface of the future pie.
And we send the cake to bake in an oven preheated to 180 degrees for 40-45 minutes. We check the readiness with a toothpick: when the center of the cake is punctured, it should come out dry.
Take the finished cake out of the mold, cool it a little, cut it and serve it!
