First of all, you need to prepare a biscuit dough, I use a classic recipe:
- 5 eggs (whites and yolks, beat separately)
- 5 tablespoons of sugar
- 5 tablespoons flour
- a pinch of salt
- baking powder 0.5 tsp l.
I distribute the finished dough on baking paper using a standard baking sheet from the oven.
I send the baking sheet with the dough into an oven preheated to 180 degrees for 12-15 minutes.
I immediately turn the finished biscuit on a wet towel, release it from the paper and roll it into a tight roll. I leave it like this until it cools completely.
When the roll has cooled down, I soak it in cold coffee without added sugar. Literally half a glass is enough.
How to prepare the cream:
- Whip 300 ml of cream with 33% fat content until light foam
- add 3-4 tablespoons of sugar to them and continue whisking gradually adding cream cheese, about 150 grams
It turns out a very delicate light cream that needs to be lubricated with a biscuit. Half of the cream must be left in order to grease the finished roll on top.

Cover the roll with the rest of the cream, and before serving it, be sure to sprinkle it with cocoa powder or chocolate chips.
The finished roll must be allowed to soak for at least 3 hours in the refrigerator, but it is best to leave it overnight.
