Preparing tomato noodle soup is not difficult. You can cook it in broth from any meat that you like. And if you want a light version of such a soup, then you can cook it without meat. Also, the vermicelli in this recipe can be replaced with rice.

Ingredients:

  • ribs - 500 g
  • potatoes - 300 g
  • large tomatoes - 3 pcs.
  • small noodles - 80 g
  • onion - 1 pc.
  • carrots - 1 pc.
  • sweet pepper - 1 pc.
  • parsley - bunch
  • salt - 1/2 tbsp. l.
  • ground black pepper - to taste
  • bay leaf - 1 pc.

Step by step recipe

1. First, cook the broth.


Take 0.5 kg of ribs and cut them into smaller pieces. I took pork ribs, but you can use any others you like.
Place the chopped ribs in a 4 liter saucepan. Pour about 2.5 liters of water into the pot here. We put everything on fire. After boiling water, cook the ribs for about 30-40 minutes.

2. While the broth is cooking, prepare the rest of the ingredients.
Take 3 large tomatoes and make a cruciform incision. Put the tomatoes in boiling water.

3. Take out the tomatoes after 1-2 minutes. We remove the skin from them.
Cut the peeled tomatoes in half, cut out the stalk and cut into slices.

4. We put everything into a bowl. Grind the tomatoes with a blender until smooth. If there is no blender, then the tomatoes can be grated.

5. Cut 350 g potatoes into cubes.
Cut 1 onion into small cubes.

6. Three carrots on a fine grater.
Cut one sweet pepper into small cubes.

7. Preparing the sautéing. Put chopped onion in a preheated pan and sauté until golden brown. Add the prepared carrots to the onion and sauté for another 2-3 minutes until soft.

8. Add chopped bell peppers to this. Cook for another 2 minutes, stirring occasionally. The vegetables are ready, remove them from the heat.

9. The broth has been boiling for about 40 minutes, remove the ready ribs on a plate and let them cool slightly. Put the chopped potatoes in the broth. After boiling, cook the potatoes for about 5 minutes.

10. While the potatoes are boiling, remove the meat from the ribs and cut it into smaller pieces.

11. Pour the cooked tomato into the pot for the potatoes. Mix everything and bring to a boil.
Add prepared meat to this. Pour 80 g of small noodles, mix and cook for about 5 minutes.

12. At the end, add the cooked vegetable sauté to the soup, put 1 bay leaf, pepper everything to taste and salt with about half a tablespoon of salt. We mix everything.

13. Finely chop a bunch of fresh parsley.
Add parsley and mix everything. Let the soup boil again and remove from heat. The soup is ready to serve.

The soup with tomatoes turned out to be very tasty and satisfying. It is simple to prepare and all the products are available. You can also make this soup with rice. The ribs can be substituted for or cooked without chicken. It will be delicious too.
