✅👌But today I want to share with you a recipe for pancakes with which I have never misfired! They always turn out to be lush, airy and delicate. I share the secrets of my cooking!
📕To make fluffy pancakes you will need: 🥙
Kefir - 0.5 l
Chicken egg (category C-1) - 1 pc.
Sugar - 1 tbsp. l.
Salt - 1/2 tsp l.
Soda - 1/2 tsp l.
Wheat flour - about 420-440 g
Vegetable oil - for frying

✨A very important point for preparing the dough of these pancakes: kefir should be at room temperature or even slightly warmer. This way, the dough will not take on excess flour, and the pancakes will not turn out "rubbery". The same goes for the egg - it doesn't have to be very cold. If you forget to remove food from the refrigerator the day before cooking, you can gently heat the kefir-egg mixture in a water bath. But don't make it hot!
So, pour kefir into a deep bowl, add salt and sugar. Little sugar is used in the recipe, so the pancakes will turn out to be almost savory. But I would not recommend adding more granulated sugar: this will make the dough heavier, and it will not come out so fluffy.
We break the egg.
We mix everything well with a whisk or an ordinary fork, a mixer is absolutely not needed here.
Now the flour. Sift it into a separate bowl and start pouring it into the kefir mass in parts. We added a little and mix immediately so that no lumps form.
The dough will be quite thick. It will not drip from the spoon, but rather fall off in heavy "pieces".
And only now we add soda. Stir thoroughly so that the soda is evenly distributed over the dough. ✨ Everything, from this moment we do not touch the dough anymore!
Pour vegetable oil into the pan - so much that it covers the bottom by 1-1.5 cm. We heat it over medium heat, then we reduce the heating power. Now we take a tablespoon and scoop the finished dough with it closer to the side of the bowl in order to disturb the rest of the dough less and put it in the pan. Immediately trim the shape of the pancakes, making them more rounded. Fry for several minutes on one side, until golden brown.
Then turn the pancakes over and fry the second barrel until golden brown.
Serve the pancakes before they cool down! They are incredibly tasty when hot! Do not forget to serve them with jam, honey or condensed milk - it will be even more appetizing.
